November 2017's Roaster of the Month: Brulerie du Quai

Secret Sip Coffee Club is pumped to bring our members a phenomenal single origin coffee from a very uniquely situated micro-roaster.  Roasting out of a magnificent repurposed barn with an amazing view on the picturesque edge of the Chaleur Bay in the Gaspé Peninsula, Québec, this month’s secret roaster is Brulerie Du Quai, and they have certainly outdone themselves with yet another remarkable single origin.

Our members had the rare pleasure of sampling one of Canada’s lead chocolate maker’s most experimental and highest grade chocolate. Dany, the owner of the roaster not only provided our members with arguably one of Canada’s best coffees, but also, a delicate bean-to-bar dark chocolate. Dany produces chocolate with abiding strictly to ancestral principles of chocolate making. Chaleur B Chocolate, the brand of the chocolate, is produced out of premium cocoa beans obtained directly from producers and uses a traditional "stone-based" manufacturing method that requires time, love and patience.

Most importantly, this month’s secret roaster served up a delectable single origin from the Las Vegas region of Honduras, which is certified by the Rainforest Alliance. The beans were washed at the source, had a combination of sun and mechanical drying and were grown at an altitude of 1000-1100 MASL. The tasting notes exhibited a rich and well rounded medium body with bright accents of citrus and nutty chocolate.
