May 2020: Monark Micro-torréfacteur


 Secret Sip is ecstatic to formally announce May’s secret roasting partner who has gone head to head with the best in class and provided yet another unbelievable journey for our palettes. Since 2014, Monark Micro-torréfacteur has been rocking out of Lévis, Quebec, continuously striving for excellence and promoting the art of specialty brewed Canadian coffees to create and cultivate a community of great artisans enjoying even greater tasting coffee.

Five years prior to starting Monark, the gastronomic team opened a craft beer store and coffee shop in Lévis, on the south side of Québec city. During those years, more than 15 craft roasters got showcased on Monark’s shelves along with a serious line up of high-end coffee grinders. Naturally, the next step for the team was to dive head-first into their vision of the perfect roast.

This month at the center of our selection resides a perpetual curiosity from the team who relentlessly seek out the purest beans with their well-travelled pallets. The team at Cafè Monark are passionate about each coffee beans journey and transformation of flavor, and meticulously observe every stage of the process from farm to cup.

May’s secret roast was a delectable and unique espresso blend, melding beans from Mexico, Ethiopia, and Brazil to form the Parka espresso. The espresso is acutely calibrated to drink seamlessly in milk-based drinks, as well as in pure pour overs. This month’s secret roast exhibited a virtually impermeable crema, with a full body of complex roasted nuts, chocolate, and vanilla cream.
