Secret Sip Coffee Club is ecstatic to be partnering with an amazing team that gave our members access to an exclusive and limited time offer to a truly special single origin. With satisfied palates, our team is proud to officially unveil our May’s secret roasting partner. A sophisticated small batch specialty roastery and built by a team of gifted roasters and coffee geniuses, the stellar team is truly making waves on the far west of our country, rocking it out of Richmond, British Columbia, Sacred Acre Coffee certainly delivered a sacred micro lot!

The mission of Sacred Acre and beliefs are truly admirable:

The origin, elevation and producer are on every bag of Sacred Acre with good reason. These are passionate and knowledgeable growers who trade their small Arabica supplies from rare plants to produce only the highest quality beans.”

The roaster is built on a foundation of core values that focus in on trust in all their relationships with suppliers and customers alike, insight into what it takes to deliver exceptionally rare tastes, sophistication in meeting the high expectations of our exclusive customers curiosity in and charisma in the continuous pursuit towards the allure of rarer taste.

As the team indicates, scarcity and rarity are not to be taken lightly. They collaborate with farmers who have heirloom plants, and grow some of the world’s most unique and flavourful coffees. Every step of the process is considered to ensure the plants remain healthy, and the land remains vital. The farmer’s knowledge of how to harvest, select and deliver these extremely rare beans has been passed down for generations and now Sacred Acre is pleased to pass the results on to you.

This month’s limited edition single origin small lot was a Mexican bean (Ixhuatlan del Café – Mexico) via the producers at the Santuario Process Center. Collectively, the lot was grown at an elevation of 1450 to 1500 MASL. The newly developed Santuario Project was constructed by the combined efforts of Camilo Merizalde and ECOM. Camilo has always been working to produce first-rate coffees and closely observes everything from the coffee varietals, to farm layout and harvesting processing. His attention to detail mixed with ECOM’s varietal researched has led the Santuario Project to producing the finest high-grade coffees.

This coffee is processed using anaerobic fermentation. Cherries are fermented in sealed tanks for 65-70 hours before being washed and fermented a second time for 70-72 hours. The cherries are finally dried on African beds for 18-20 days, reaching their final humidity of 10.5%. This combination of anaerobic and natural coffee processes is also known as the Cherry Madness method.

The notes elicited by this beautiful brew were sweet Red Grapes, Molasses, Dark Cherries, and manuka Honey.

Secret Sip Coffee Club is so pleased to have partnered with Sacred Acre to bring you this month's secret roast, and what we believe to be, one of Canada’s best coffees. To learn more about Sacred Acre, check out their website below:
