October 2022: Seventh Coffee Company

Secret Sip Coffee Club is honoured to feature a truly special secret roasting partner for the month of October, with a very unique and important message that drives the mission and team of this roaster. Servicing the Brantford, Ontario and area populous, Seventh Coffee Company, has more than just coffee to be thankful for! The namesake and logo, deserves its own feature, but alas, we shall do our best to showcase the amazing things this mighty roaster is doing to generate good, including its commitment to improve upon the world in a meaningful way, both through ethical sourcing, and charitable donations. “A portion of every dollar sold is donated directly to the causes we support.”

On August 22nd, 2017, founder Mike Gatopoulos’ son, Jack, was diagnosed with a rare genetic disorder called Williams Syndrome. Williams Syndrome is a genetic condition that is present at birth and can affect anyone. It is characterized by medical problems, including cardiovascular disease, developmental delays, and learning challenges. These often occur side by side with striking verbal abilities, highly social personalities and an affinity for music. It affects around 1 in 10,000 people. Williams syndrome is caused by the spontaneous deletion of 26-28 genes on chromosome 7, hence Seventh Coffee Company. “Our logo is missing part of the 7 as a constant reminder to us of what we’re doing, and why we’re here.”

Seventh Coffee Company truly treated our members across Canada with a rare single origin from the Marcala region of Honduras. Grown at 1650 MASL, containing the vrietals of Catuai, Bourbon, Lempira, IH90, this beautiful roast exhibited exceptional tasting notes of Milk Chocolate, Stone Fruit, Dark Chocolate, and toasted caramel.

“CABRIPEL (Cooperative Agropecuaria Brisas del Pelón Limitada), is a forward-thinking group of about 50 producers. CABRIPEL is woman-owned, and has many women producers.  The CABRIPEL cooperative also successfully grows other products: In addition to coffee and the products from the shade-giving plants (bananas, plantains, oranges, mangoes and wooden trees such as “paterna” and “guamo”), the CABRIPEL cooperative also builds corn on 75 hectares of land, beans, peppers, lettuce, cabbage, green beans, radishes and tomatoes and the farmers keep individual dairy cows.

The cooperative promotes cohesion in the village and works for the common good. A bridge over the river of the same name “La Estanzuela” was recently completed, which makes it easier to open up individual municipalities and to transport the coffee. Now there is a project to improve the water supply and the irrigation of vegetables. The amount of care they take at every level in producing coffee is extremely evident in the cup.”
