To conclude this remarkable year of partnerships, Secret Sip Coffee Club is proud to feature East Dock Coffee Co. from Niagara, Ontario. Known for its commitment to quality and character, East Dock has become a favourite among Ontario coffee drinkers for its meticulous roasting and bold yet balanced flavour profiles. Founded by friends with a shared vision to showcase the diversity of the coffee world through local craftsmanship, East Dock has grown from a garage roastery into a full-scale operation that still retains the integrity of its roots. Their team focuses on purposeful sourcing and methodical roast development to create coffees that speak for themselves.

Their philosophy is built on sustainability and community. They prioritize working with importers who support environmental stewardship and farmer empowerment, and they donate a portion of their seasonal sales to local food security initiatives in the Niagara region.

This month’s feature is a Sumatran Mandheling from Aceh province, grown at 1,400 MASL on the lush volcanically rich slopes of Mount Leuser. It’s a Typica varietal, wet-hulled and medium-dark roasted to accentuate the origin’s distinctive earthy depth. The result is a rich, full-bodied cup with notes of dark chocolate, cedar, and sweet spice, accompanied by a velvety texture and long, resonant finish.
