For September, Secret Sip Coffee Club is excited to highlight Seven Mystery Coffee Co. of Scarborough, Ontario, a roaster that marries innovation with transparency. Their philosophy: “Savor the sustainability, trace the source, taste the depth” perfectly reflects the values that guide our club’s selections.

Seven Mystery Coffee Co. was born from a vision to make coffee both mysterious and knowable: to celebrate origin while respecting process. Their team approaches roasting as a dialogue between science and intuition, crafting each roast curve to express the bean’s natural sweetness and clarity.

Their sustainability model focuses on connection and accountability. They work closely with importers who support micro-lot programs and ensure equitable relationships with farmers. Each origin they feature is chosen for its story, its people, and the journey behind the cup.

This month’s coffee comes from the Eastern Highlands of Papua New Guinea, grown at 1,600 MASL by smallholder farmers. It is a Typica varietal, fully washed and sun-dried on raised beds. The cup is clean and vibrant, offering notes of red plum, caramel, and floral honey with a silky body and gentle acidity. It’s a complex and memorable origin that speaks to the care of its producers and the precision of its roasters.
