For the month of May, Secret Sip Coffee Club proudly presents Appalaches Torréfacteur, a Québec roaster that perfectly blends artistry and integrity. Based in the heart of the Appalaches region, their roastery has become synonymous with refined roasting and a deep respect for origin.

Appalaches Torréfacteur was founded by lifelong coffee enthusiasts who sought to bring elevated specialty coffee to rural Québec. Their approach balances science and intuition, leveraging precise roast curves while maintaining the artisanal hand that defines small-batch excellence.

Their philosophy centres on transparency and traceability. Every bag is accompanied by details on the farmer, cooperative, and region — emphasizing accountability from crop to cup. They invest in direct-trade relationships with African producers and prioritize traceable, ethically certified lots.

This month’s feature is a stunning Burundi Nkoronko lot grown at 1,700 MASL in Ngozi Province. It’s a Red Bourbon varietal, fully washed and patio-dried to preserve brightness. The cup is layered and complex, with notes of red currant, black tea, and honeyed citrus over a clean, silky body. It’s the kind of coffee that exemplifies why Burundi has become one of Africa’s most exciting origins.
